National Pickling seeds produce a classic pickling cucumber variety developed in collaboration with the National Pickle Packers Association — purpose-bred for the jar, yet equally rewarding straight off the vine. These compact, blocky cucumbers reach 3 to 4 inches at peak harvest, with smooth, light green skin, thin walls, and a dense, crisp flesh that holds its crunch through the brining process. The small seed cavity and relatively few spines make prep work quick and easy, whether you're packing pints or slicing for a summer salad.

Growing Guide

National Pickling matures in approximately 52 to 55 days from direct sowing, making it one of the more productive and efficient cucumbers for a home garden. Plants prefer full sun — at least 6 to 8 hours of direct light daily — and perform best in loose, well-draining soil with a pH between 6.0 and 6.8. Direct sow seeds outdoors after all frost risk has passed and soil temperatures have reached at least 60°F (15°C). For a head start, sow indoors 3 to 4 weeks before your last frost date, then transplant carefully to avoid disturbing roots.

Space hills 36 to 48 inches apart, sowing 3 to 4 seeds per hill and thinning to the 2 strongest seedlings. For row planting, space plants 6 to 8 inches apart in rows 3 to 4 feet wide. These vining plants benefit from a trellis or simple wire support, which improves air circulation, reduces disease pressure, and keeps fruit clean and straight. Consistent moisture is key — aim for 1 inch of water per week, and mulch around the base to retain soil moisture and regulate temperature. Difficulty level: beginner-friendly.

Harvest & Use

For pickling, harvest cucumbers when they reach 2 to 4 inches long — at this stage, the skin is tender, the seeds are small, and the flavor is mild and clean with just a touch of vegetal brightness. Check vines daily once fruiting begins, as cucumbers left on the plant too long will develop a bitter edge and signal the plant to slow production. The more you pick, the more the plant yields.

National Pickling excels in both quick refrigerator pickles and traditional lacto-fermented or water-bath canned dills and bread-and-butter pickles. The firm flesh absorbs brine beautifully without becoming mushy. Freshly harvested fruits also make a satisfying raw snack — sliced with a little salt, or tossed into salads for their satisfying snap. Store unwashed cucumbers in the refrigerator for up to one week, or process your harvest promptly for the best pickle texture.

A reliable, high-yielding variety with a proven track record, National Pickling delivers exactly what every home canner and gardener needs from a cucumber: consistency, crunch, and abundance.
