Celery is one of the more demanding vegetables in the garden — it thrives in full sun to partial shade, needs consistently moist, fertile soil rich in organic matter, and grows best in cool conditions with temperatures between 60°F and 70°F (15°C to 21°C).

Start seeds indoors 10 to 12 weeks before your last frost date. Seeds require light to germinate — press them gently onto the soil surface and keep the tray consistently moist. Germination typically takes 14 to 21 days. Transplant seedlings outdoors after all frost risk has passed, spacing plants 8 to 10 inches apart in rows 18 to 24 inches apart. A rich, well-amended bed with compost worked in deeply will support the heavy feeding this crop requires.
