Sow seeds directly into well-draining, fertile soil with a pH between 6.0 and 7.0, or start indoors 6 to 8 weeks before the last frost date. Because parsley has a long taproot, transplanting can be tricky — direct sowing is often preferred.

Space plants 6 to 8 inches apart, in rows 12 inches apart. Parsley germinates slowly — typically 14 to 28 days — so patience is key. Soaking seeds in warm water for 24 hours before sowing can improve germination rates. Keep the soil consistently moist during germination. A biennial treated as an annual in most gardens, Italian Parsley grows best in cool to mild conditions and can handle light frost, making it an excellent spring and fall crop. In mild climates, it may overwinter and bolt to seed in its second year.

For longer storage, leaves dry well or can be frozen flat on a tray and transferred to a sealed container. A well-tended plant will produce generously across the season with minimal input — reliable, flavorful, and genuinely useful at every stage of cooking.
